It is one of the most anticipated gastronomic openings of the autumn in Morocco: Alain Ducasse has officially opened Aldabaran, his new restaurant on the 33rd floor of Tour Mohammed VI, between Rabat and Salé. The address sits high above the Bouregreg, with the Atlantic in view, inside the new Waldorf Astoria Rabat Salé. The name Aldabaran refers to one of the brightest stars in the sky, in the constellation of Taurus, and recalls the importance of Arab astronomers in the history of observing the heavens — a well-chosen name for a table at this height.
A Mediterranean according to Ducasse
For this new address, Alain Ducasse stays true to one of his favourite culinary territories: the Mediterranean. The menu looks in particular towards the French and Italian rivieras, while bringing in Moroccan produce. Seasonality, precise cooking and the readability of the product are the guiding thread of the offer. On the menu are petits farcis in the style of Lucien Tendret, filled with farm poultry and milk-fed lamb, gambero rosso with ricotta tortellini, and lamb with caponata. Unusually for the Ducasse universe, Aldabaran also serves a proper breakfast, with viennoiseries made on site, madeleines and a Cookpot of eggs and mushrooms.
An Art Deco setting, Moroccan craftsmanship
In the kitchen, Alain Ducasse has appointed Morgan Perrigaud, well established in the Ducasse galaxy after several international experiences, including Jiwan, the restaurant at the National Museum of Qatar in Doha, which he joined in 2022. Aldabaran seats 66 covers across some 510 m². The décor is by Pierre-Yves Rochon, inspired by 1930s Rabat and its Art Deco heritage: black parquet, black-and-white zellige, rosewood, varnished walnut and sand-coloured leather, with large bay windows opening onto Rabat, Salé, the Bouregreg valley and the ocean. Several Moroccan crafts meet contemporary furniture here: damascene work from Meknes, ceramics from Fes and zellige.
Tour Mohammed VI rises to 250 metres and has 55 floors, making it the tallest building in Morocco. Aldabaran is less Ducasse discovering Morocco than his return in a form much more directly identifiable with his name: as early as 2005 he was called on for the restaurants at Pacha in Marrakech, and in 2017 Ducasse Conseil advised on all the restaurant offer at the Palmeraie Country Club in Bouskoura.
